Gluten Free Flaky Pie Crust
For a good pie crust use this recipe for:
1 1/4 c white rice flour,
1 cup tapioca flour,
1 T sugar,
1/2 te baking soda,
1/2 te xanthan gum,
1/2 te sea salt,
1/4 c canola oil,
4 T cold soy butter,
1/2 c soy milk,
Directions: mix in a medium bowl, whisk together the white rice flour, tapioca flour, sugar, baking soda, xanthan gum, and salt; add the shortening and butter to the flour mixture; use your fingertips, a pastry blender or two dinner knives, and rub or cut the shortening and butter into the dry ingredients until they are the texture of a coarse meal with pea-sized pieces; gradually stir in the milk with a fork to moisten the dry ingredients; on floured cutting board, roll out dough, and add pastry to a buttered pie pan to bake in a 350* oven for 18-20 minutes;see other blogspot for listing reference for blog's Gluten Free Cookbook on:
