Holiday Creamed Cheese Sauce
A gluten free Cheese Sauce for the Holidays, just add: 2c heavy cream, 1 1/2 te Dijon mustard,
3/4 te kosher salt,
1/8 te cayenne pepper,
3c shredded sharp yellow or white cheddar cheese.
1/4 c (optional)Green onions sliced,
directions:
Add for cheese sauce into medium sauce pan, whisk the cream, mustard, salt, and cayenne pepper together, bring to a boil over medium-high heat; decrease the heat and whisk in the cheddar cheese until smooth; pour sauce over pasta, stir in green onions, pour mixture into baking dish; add on top topping mixture; bake until golden brown, 20-25 min..

A great olive recipe to follow:
Green-olive relish, thanks to Amy Harris
1/4 cup drained, bottled green olives;
1 small garlic clove, minced and mashed to a paste with a pinch of salt;
2 tablespoons finely chopped parsley;
2 tablespoons extra-virgin olive oil;
2 teaspoons fresh lemon juice;
Pulse the olives=
in a food processor until they are finely chopped. Add the remaining
ingredients and pulse until everything is mixed.

Gluten Free Mac and Cheese
Gluten Free Macaroni and Cheese
cook 1 lb brown rice elbow or shell pasta found at health food store,
cook pasta in large pot of salted boiling water as noted with instructions on package and done as al dente.
Drain Pasta and return the pasta to the pot.
Topping
2/3 c grated Parmesan cheese,
1/3 c gluten-free dried gluten free bread crumbs,
1T olive oil,
Add into small bowl topping ingredients together.
Cheese sauce

Spinage Salad Gluten Free
This is a fast, good taused Salad recipe, and add in: 1 Bag of spinach, 1 T crumbled blue chesse , 1T balsamic vinegar, 3 oz drained canned wild samon, 1/2 pink grapefruit wedges and 1T chopped wallnuts.

Preheat Oven 425*
A recipe to follow for muffins:
1/4 c butter,
1/2 c soy silk milk,
2T Honey,
2T Applesauce
3 c Brown Rice Flour,
1/4 Baking Soda,
Directions:
1.Mix dry ingredients,
2. Mix wet ingredients,
3. Combine both mixtures,
4. Pour into nonstick muffin tin,

Gluten Free Foods
So, what is a gluten free food? Gluten is the protein found in some grains such as rye, barley and others, but corn and rice are safe foods, and other safe foods are: plant fiber: onion, garlic, leeks, Jerusalem artichoke, asparagus, chicory root, Jamaica,dandelion, bananas, agave and jams.
Milk is a gluten free food:whole milk, low fat, skim, dry, evaporated, condensed, buttermilk, cream, whipping cream, Velveeta cheese food, American cheese, all aged cheese as Cheddar, Swiss, Edam and Parmesan.
Meat at 100% is gluten free: (no grain included except breaded with pure cornmeal, potato flour or rice flour), peanut butter(as not contaminated
with bread/cracker crumbs), eggs, dried beans, peas and pork products.
Gluten free foods: butter, margarine, vegetable oil, shortening and lard.
fruit is gluten free: fresh, frozen or canned.
Vegetables of gluten free: white and sweet potatoes or yams.
Gluten free snacks of desserts: brown/white sugar, rennet, fruit whips, gelatin, jelly, jam, honey, molasses, pure cocoa, fruit ice and carob.
Some drinks are gluten free: tea, carbonated-not root beer, fruit juice, mineral/carbonated water, wine, instant/ground coffee.
soups: as checked the inexpedience, and check them all!
Gluten free thickeners: Gelatin, arrowroot starch, corn flour germ/bran, rice bran/flour, rice polish, potato flour, potato starch flour, soy flour, tapioca and sago.
Some condiments are gluten free: gluten free soy sauce, distilled white vinegar, olives, pickles, relish and some ketchups.
Gluten free seasonings: salt, pepper, some herbs, flavored extracts, food coloring, cloves, ginger, nutmeg, cinnamon, bicarbonate of soda, baking powder, cream of tartar and mono-sodium glutamate.

Many times with the American culture, both parents work, and kid's diets get left out for the most part, and there is a fast paced, fast moving lifestyle, so it is time we change all that when it comes to health; after all we eat to have health, and we are aiming for good, healthy health.
According to The Autism Network for Dietary Intervention (ANDI), Karyn Seroussi wrote a book for the severly disabled for life, and set out to prove a gluten free diet would reverse the effects of Autism, so with the story on this little kid, he went from having chronic health problems to being a more normal little boy, and not every child responds in health like this at first, but as a trial basis, a gluten free diet could help a child with autism.
